Blackened Seasoning

A spicy blackened seasoning for fish, seafood, or chicken.


  • 1 heaping tablespoon paprika
  • 2 teaspoons salt
  • 1 heaping teaspoon garlic powder
  • 1 heaping teaspoon onion powder
  • 1/4 to 1/2 teaspoon ground cayenne pepper
  • 2 teaspoons black pepper
  • 1/2 teaspoon leaf thyme
  • 1/2 teaspoon leaf oregano


Mix the ingredients well and funnel into a shaker. Seal well and store in a cool dry place.

Salt and Pepper Chicken Wings


Spicy Pepper Salt

3 tablespoons Salt
½ tablespoon Five spice powder
½ tablespoon Peppercorn (crushed)
½ tablespoon White pepper
½ tablespoon Sugar
1 whole Star Anise (crushed)

Making spice salt
Preheat a dry wok over amedium heat; add peppercorns and star anise. Keep stirring and shaking the pan frequently for about 2 – 3 minutes until fragrant. Remove from heat and leave it to cool.

When cooled, grind peppercorns and anise with a mortar and pestle, or crush with a rolling pin.
Combine all the ingredients together in a bowl and mix thoroughly.

For storage
Store in a jar or an airtight container.

The Chicken Wings

8-10 chicken wings
1 tsp. salt
1tsp. Chicken powder
½ tablespoon White pepper
1 stalk spring onion (finely chop)
2 cloves garlic (crushed)
Shaoxing wine
¼ medium onion (finely chop)
¼ tsp. crushed spicy chilli pepper
½ litre vegetable oil
2 tsp. custard powder
1 tablespoon cornflour
Sesame oil

Wash and dry the Chicken wings with a paper towel, discard the small wing tips and cut each wing into half, place in a bowl, than add 1 tsp. chicken powder, 2 tsp. custard powder, 1 tablespoon cornflour, 1 tsp. salt, ½ tsp. white pepper and few drops of sesame oil mix evenly and set aside.

To cook
Heat ½ litre vegetable oil in a frying pan over a high heat for 2 minutes. Put in a small piece of onion in the oil, wait until it’s turn golden brown (That means the temperature of the oil is just right), then add the chicken wings, deep-fry for about 4-5 minutes until they turn golden brown and the bubbles in the pan start to fade.

Remove from oil into a strainer and drain off the oil.

Reheat the pan with about 2 tablespoons of oil, add chopped onion, spring-onion, garlic, crushed chili and stir fry for 1 minute and add in 2 tsp. spicy salt and pepper, (which you prepared earlier) together with chicken wings and 2 tablespoons Shaoxing wine. Keep stirring and toss, mix thoroughly.

Finally, sprinkle a few drops of sesame oil over and garnish with coriander.
